Tom & Jerry Batter

  • 12 eggs (separated)
  • 1lb butter (softened or room temp)
  • 3lb powdered sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice


The batter can be kept in the refrigerator for several weeks or frozen for several months.

To make a Tom and Jerry:

Fill a mug 2/3 full with hot milk. Add 1 shot of brandy or spiced rum. Stir in 1-2 heaping Tablespoons of batter and mix until foam forms on the top. Sprinkle with a dash of cinnamon or nutmeg.


Step 1
Separate egg whites from egg yolks. Beat egg whites with salt in a large bowl until foamy and stiff peaks form. (A stand mixer is great for this.)
Step 2
In a separate bowl, beat egg yolks to soft peaks.
Step 3
In a third bowl, beat softened butter and powdered sugar until fluffy.
Step 4
Add vanilla and egg yolks to butter and sugar mixture. Mix well.
Step 5
Add cloves, nutmeg, cinnamon and allspice to butter and sugar mixture. Mix.
Step 6
Fold egg whites into mixture until well blended.
