Spicy Refrigerator Pickles and Green Beans

  • 1 quart Mason jar
  • Sliced or speared cucumbers or green beans
  • 3-4 Slices Fresh jalapeños
  • 5 Sprigs Fresh dill
  • 3-4 cloves Fresh garlic (crushed)
  • 1/2 cup Distilled white vinegar
  • 1 1/4 cup Water
  • 1 tablespoon Salt
  • 1/2 teaspoon Sugar
  • 1/2 teaspoon Dill seed
  • 1/2 teaspoon Mustard seed
  • 1/2 teaspoon Coriander seed
  • 1/2 teaspoon Celery seed
  • 1 teaspoon Black peppercorn


This is recipe for refrigerator pickles and green beans. If you'd like to can them, follow your canning directions. The amounts listed in the recipe are per quart jar. 


Step 1
Mix water, vinegar, salt and sugar together in a pourable container until salt and sugar dissolve.
Step 2
Sprinkle spices and garlic cloves into jar.
Step 3
Arrange dill sprigs, jalapeños and cucumbers or green beans in 1 quart canning jar.
Step 4
Add the water and vinegar mixture until jar is filled to rim. Replace lid and give it a good shake.
Step 5
Refrigerate for several days before opening.
