Apples here. Apples there. Apples everywhere! 

I have more apples in my fridge, on my counter and in my kitchen than I know what to do with! And they’re all Honeycrisp apples. We absolutely LOVE Honeycrisp apples; they’re sweet, crunchy, juicy and were developed right here in my home state by the University of Minnesota. 

It’s an apple variety that you typically enjoy by just cutting up and eating. There’s no way that we can eat this many apples before they go bad so I decided to get creative. Typically, you would want to use a tarter apple like Granny Smith in baking. But the Honeycrisp does have similar firmness to a Granny Smith which means it holds up well in the oven. My daughter and I put together this simple and DELICIOUS apple crisp recipe the other day. I’m not kidding when I say it didn’t even last 24 hours! My family absolutely devoured it! I hope your family enjoys it as much as mine!

Honeycrisp Apple Crisp

Serves 6-8

Cook time 45 minutes

Ingredients

  • 4 Large honeycrisp apples (sliced)
  • 1/2 cup light brown sugar (packed)
  • 1/2 cup all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1/3 cup butter (softened)
  • 1/2 teaspoon vanilla
  • 3/4 teaspoons cinnamon
  • 1/2 teaspoon nutmeg

Directions

Step 1
Preheat oven to 375 degrees. Spray or grease bottom and sides of 8-inch square baking dish.
Step 2
Peel and core apples. Slice apples and spread out in baking dish.
Step 3
Stir together remaining ingredients until well mixed and crumbly. Sprinkle over apples.
Step 4
Bake 45 minutes or until crumble topping is golden brown and apples are soft. Serve warm with ice cream (optional).
